How did you get the Mavic rims looking like that?

Was it just straight up polish?

The results are worth the effort.

I used oven cleaner to remove the anodizing, Then I used Mothers aluminum polish. I have also done this to a set of Velocities But that required some sanding because the anodizing was much tougher.
