    does anyone know if I will encounter a poor chainline by adding 5mm spacers to each side of a 110mm rear hub to fit a 120 spaced frame, or would chainline not be an issue here? I'm not sure if 110 hubs have the standard 42mm chainline or not...

    That would not change the chainline, chainline is measured from the center.
    You can change chainline with spacers by adding them to one side, and then redishing the wheel. If you don't do that, it won't change the chainline.
