i like those wheels; they are a big part of why your bike is "feather light and rides smooth as silk".

regarding brooks saddles, i believe most people like them because they are comfortable. so, alternatively, the choice of a track frame when comfort is a priority has me scratching my head. but that's what happens when you get old: you scratch your head a lot. maybe it's the shampoo i'm using.

Brooks saddles

B17s came about in an era when bikes typically exposed an "fist-full of seatpost" or less. They are not designed to accommodate large saddle-to-bar distance like that of a typical track bike. Their popularity on keirin frames and the like is kind of head-scratching for that reason.

I think you'll like the Regal (or anything) a lot better, it's much more narrow, and won't look as big an clunky as the B17 does on that bike.

I'd get a yellow saddle to match your grips.
