I almost did mine like that

You know I had visions of doing up my Supercourse very much like that, but it was complete and working in nearly original road trim, and I had a good fixed bike. Instead I put Mustache bars on it and Suntour Barcons. I sold it, because it was sort of redundant, didn't serve any purpose not served by another bike, but I did love that bike. The guy I sold it to rides the snot out of it, so it was for the best.
