There are plenty of good looking hubs out there... I personally think profile hubs look pretty damn good. What would cause you to perceive a hub as better looking?

i dont know how good they are but the hubs on the cane creek v-33 are sweet .

They're not for sale yet but I really like these http://valliecomponents.com/ I think they look sick, and on the practical side of things no worries about stripping threads. Zipp track hubs look sweet too.

So why haven't companies looked back and reinterpeted the old designs?
Function is all imortant... but it can be beautiful as well.

I agree... but it's all matter of taste, I am sure that most of the todays companies believe that they offer beautifully designed products.
I personally don't think so... Most of the current production hubs are too chunky, too function oriented and don't have style or elegance that for example Campagnolo C-Record (sheriff star) hubs had. They also use very aggressive branding, logos are huge.

Italians do it well... industrial design (in general) for them is very important.

But as I said, since it's all matter of taste it basically comes down to what you think about product that you are producing / buying.
I am sure there will be lot of different answers on "What is your favorite track hub design?" question.

Let's look at the Formula Hub.... inexpensive, durable, upgradable.
How much more does it take NOT TO put those ugly cutouts on them?

it was said in a following context:
all attention went to function none to style/look/design, therefore too function oriented
