Is it workable to use my 1985 Schwinn World Sport stem mounted shifters with a 3 or 5 speed, internally geared hub ?
  1.
Mostly no. If you're using indexed shifters, the pull is different. If you're using them in friction mode, partially shifting into place will chew the inside up.

The part of the answer that isn't "no" is that you can mark on your shifter where 2nd gear is (on a 3-speed) and get really used to it. On a 5-speed, you'd have to mark and memorize 2,3, and 4.
  2.
Yeah, not really a good idea. Friction shifting a regular derailer is as simple as listening and feeling, that isn't as easy with internals.
